About the Recipe
These vegan Dan Dan noodles are spicy, nutty and so addictive. It is so easy and delicious ready within 20 minutes.By adding Sichuan peppercorns that will create a slightly tingly numbness on the tongue, it makes the whole dish flavorful.

Ingredients
Homemade Chili Oil
65ml Harvist Chili Infused Red Palm Oil
3 tsp hot red pepper flakes
2 tsp Sichuan peppercorn, mildly flavor.
2 tsp finely minced ginger
2 tsp finely minced garlic
1 tsp salt
Noodle Sauce (6 serving)
1/3 cup unsweetened peanut butter
1/3 cup light soy sauce
1/4 cup dark soy sauce
1/4 cup black vinegar
4 cloves garlic, finely minced
2 tbs scallion, finely minced
To assemble per serving
400g Dan Dan Noodles or any noodles
1 small Choy Sum or any leafy vegetable
1 tsp chili oil
1 sunny egg
Preparation
To Prepare Chili Oil?
1. Add all the ingredients into a bowl.
2. Heat the Harvist Infused Extra Red Chili Red Palm oil in a saucepan over medium-high heat for about 3 to 4 minutes.
3.Pour the hot oil into the bowl with the spices and stir with a wooden spoon. Let it set aside for 30 minutes.
4.Give the oil a stir before serving. Drizzle the oil over noodles or dumplings and spoon some of the chili flakes onto any dish. To store, transfer the oil into a sterilized jar and refrigerate. Use the oil within 1 to 2 weeks.
To prepare the sauce:
1. Whisk the unsweetened Peanut butter and light soy sauce together in a bowl until fully incorporated. Add the black vinegar, dark soy sauce, garlic and scallion. Continue stirring until mixed.
To assemble per serving:
Steps:
Cook noodles according to package instruction.
Blanch all leafy vegetables, drain and set aside.
For each noodle bowl, add 1/4 cup of noodle sauce, add the chili oil according to your taste. Add some noodles, then top with Choy Sum and sunny egg.
Serve hot or cold.
